 1 pt plain Greek Yogurt
 1 Witten's cucumber (peeled or unpeeled) chopped fine
 1 clove garlic crushed
 Juice of half a lemon
 ½ cup olive oil
 1 tsp salt
 Parsley

Drain excess liquid from yogurt (works best if left to sit in cheesecloth until it no longer drips). Add the cucumber, garlic, lemon juice, olive oil, and salt to yogurt and mix well. Top with parsley and refrigerate. Serve with pita chips or veggies.
