 1 Witten’s Acorn squash, sliced
 2 tbsp Olive Oil
 1 tsp Garlic Powder
 ¼ cup Parmesan Cheese, grated
 Salt and Pepper to taste

Preheat oven to 400º.

Cut the squash in half, remove the seeds with a spoon, then slice the squash into 1/2 moon shaped pieces.

In a large bowl, combine olive oil and garlic powder.

Toss the squash in oil then lay squash out on a baking sheet. Sprinkle each slice with parmesan cheese and then season with salt and pepper.

Bake for 30 minutes until the squash is tender and the cheese is golden brown.
