 3 Ears of Witten’s Sweet Corn
 ½ tsp Salt
 2 tbsp Olive Oil
 1 tsp crushed red pepper
 2 Cloves garlic, chopped/minced
 1 small/medium Candy Onion, finely chopped
 1 Witten’s Red Bell Pepper, diced
 2 Witten’s Hot Hungarian Wax Pepper, diced
 1 Witten’s Heirloom tomato, diced
 1 tbsp Sugar
 ½ tsp Paprika
 ½ tsp Cumin
 ½ tsp Black Pepper
 ¼ tsp ground Coriander Seed

Bring water to boil in a large stock pot with a pinch of salt. Boil the 3 ears of sweet corn for 3-4 minutes. Remove the corn from the water and immediately place an ice bath. Once the corn is cool enough to handle, cut the kernels off the cob and into a large bowl-Set aside.

In a large saucepan, bring olive oil, crushed pepper, and garlic to medium high heat, add the onion and sauté until golden brown. Turn the heat down to medium and add the red bell pepper, Hungarian peppers, tomatoes, and sugar, stir to mix up. Heat for 5 minutes, stirring occasionally, then add the corn, paprika, cumin, black pepper, and ground coriander. Cook for 3-4 more minutes, or until everything is heated and the flavors have had time to mix. Remove from heat and serve hot as a topping or side.
