 2 tbsp Lemon Juice
 1 tsp Honey
 1 tsp Dijon Mustard
 ¼ tsp salt
 ¼ tsp Ground Pepper
 2 tbsp Extra-Virgin Olive oil
 1 (5 oz.) Package Arugula
 3 cups Chopped Witten's homegrown Cantaloupe
 1 cup Crumbled Goat Cheese (about 4 oz.)
 ½ cup Red Onion chopped
  cup Shelled Unsalted Pistachios, Toasted (optional)
 ¼ cup Torn Fresh Basil Leaves

Whisk lemon juice, honey, mustard, salt, and pepper together in a large bowl.

Slowly whisk in oil. Add arugula, cantaloupe and onion and toss to coat.

Transfer to a serving platter and top with goat cheese, pistachios, and basil.
