Sweet Corn Muffins

 ½ cup self rising Flour
 6 tbsp Butter, melted
 2 eggs
 2 ears of Witten’s Sweet Corn (cut off the cob)
 ½ cup shredded cheese
 ½ cup Milk
 2 tbsp finely chopped chives (optional)

Preheat oven to 400 degrees.

Line a mini muffin tray with cases.

Melt butter in a pan.

Mix flour, butter, eggs, milk, cheese & chives in a bowl.

Divide mixture into muffin cases– filling them 3/4 full.

Bake muffins for 15 minutes.

Let muffins stand for 5 minutes and then turn onto a wire rack to cool. Enjoy!!!
