Oven Roasted Potatoes, Green Beans and Onions with Thyme and Garlic

 1 ½ lbs small red potatoes
 2 lbs fresh Witten's green beans
 1 medium Vidalia onion
 8 cloves of garlic
 ¾ tsp ground dried thyme
 3 tbsp olive oil
 salt & pepper

Preheat oven to 350℉

Wash all of your vegetables and cut the potatoes into quarters, half and slice the onion thinly, peel and roughly chop the garlic cloves.

Add all the vegetables to the baking sheet drizzle the olive oil over the top add the thyme and salt and pepper

Toss well and spread into single layer roast for 30 minutes, while roasting cut your green beans into thirds.

After 30 minutes remove pan from oven and add the cut green beans, toss well spread back out in single layer.

Place back in the oven to roast for another 30 minutes.
