Mini Peach Sandwich Cookies

Mini Sugar Cookies:
 1 stick Very Soft Butter
 4.50 oz Sweetened Condensed Milk (room temperature)
 1 cup and 2 Tbsp. All-purpose Flour
 Pinch of Salt
 1 tsp Vanilla Extract (Optional but recommended)
Peach Buttercream:
 1 ½ cups Butter
 5 Peaches, peeled. pitted and coarsely chopped (about 1 ½ lb.)
 ½ tsp Salt
 3 (16oz.) pkg. Powdered Sugar
 3 tsp Vanilla Extract
 8 to 9 Tbsp. Whole Milk
Mini Sugar Cookies

Soften butter generously, but do not melt. Combine condensed milk then fold in the flour.


When combined into a batter put into a piping bag and pipe each cookie about the size of a nickel.


Once you’re done slightly press down the top. Bake at 350℉ for 8 minutes.


Roll in peach colored sanding sugar and set aside

Peach Buttercream:

Mix all Buttercream ingredients


Take 2 Cookies, pipe a little Peach Buttercream in between and press the two together.


Optional: Garnish with Mint Leaf.
