Print Options:

Herb Roasted Veggies

Your choice of fresh veggies (suggestions: zucchini, squash, green beans, potatoes, peppers, carrots, cauliflower, Brussel sprouts, onions, cherry tomatoes, etc.)
 Olive oil
 Juice of one Lemon
 4-5 cloves of Garlic
 Fresh or dried Herbs: rosemary, parsley, basil, thyme
 Salt and Pepper to taste

1. Preheat oven to 400 degrees and line a 13x9 roasting pan with foil for easy cleanup.


2. Roughly chop garlic and veggies and place in pan. Drizzle olive oil, lemon juice, salt and pepper over the top.


3. Chop up fresh herbs and sprinkle over the top.


4. Toss and bake uncovered for 40-50 minutes or until desired doneness.
